A Gift for St Patrick

These stunning little cupcakes were a bit of a last minute idea. Last night (night before St Patricks Day) upon leaving work, I thought I would give it a go, see what I could find in the way of cake decorations/sweets, and they turned out a treat.

I got the inspiration from a post on twitter from www.twitter.com/thekitchn last week, and luckily, the supermarket had useful rainbow strip sweets in!

A normal cupcake recipe was used, and the icing is butter icing. The pot of gold itself is a Rolo with 100′s and 1000′s stuck into the hollow using sparkly writing icing.
